Simple Christmas Pudding

  • 2 Cups Raisins
  • 1 Cup Self-Raising Flour
  • 1 Cup Butter
  • 1 Cup Fresh Breadcrumbs
  • 1 Cup Sugar
  • 1 Cup Mixed Nuts (Crushed)
  • 1 Tsp Cinnamon
  • 1 Tsp Mixed Spice
  • 1 Cup Milk
  • 1 Egg

To make: combine all of the dry ingredients in a mixing bowl, then add the egg and the milk. Once well-combined pour into a pudding bowl.

Cover this with a double layer of buttered foil, making a pleat in the centre as this will allow the cake to rise. Tie the foil with string then place in a large pan containing simmering water, which covers half of the sides of the bowl. Steam, covered with a lid for 2 and a half hours.

Serve with accompaniments of your choice!
